Councillors will next week decide whether to grant a street trading licence to a Mexican food truck looking to diversify its business.

Good Food Cartel Ltd has applied to Warwick District Council for the licence which would allow it to set up at various pitches across the area to sell its hot food and cold drinks.

The business has applied for permission to operate until 8pm - later than the 6pm usually allowed by the local council.

In its application, the business said: "We specialise in authentic Mexican Street Food dishes combining locally sourced produce and native ingredients imported from Mexico to create unique flavours and memorable customer experience.

"Over the last few years, we have developed an excellent reputation among the locals within the Warwickshire borough who had a chance to try our food at the events like Leamington Spa Food Festival, Art in the Park or Cars in the Spa as well as various corporate bookings from local businesses.

"Our operation is mainly focused on large events like music, food or automotive festivals taking place across the country.

"Due to weather conditions in the UK, these events are usually taking place during the warmer months.

"Unfortunately, this means operational and financial struggles we are facing throughout the rest of the year.

"A main aim behind the application for the Street Trading Consent is to ensure the business' operational consistency and support the financial sustainability outside of the peak season."

Good Food Cartel Ltd says it wants to operate near local businesses to pick up lunchtime traffic, as well as at local pubs and venues in the evenings.

The business has also asked the council to bend its usual rule which only allows touring food vans to stay in one place for 15 minutes at a time.

"Due to the type of operation, we would like to ask for the 15-minute rule to be removed," the application continued.

"Unlike ice cream vans, our product and equipment require preparation time in order to be sold to customers."

A decision will be made at the licensing and regulatory committee meeting on Monday 30 March.
